“This cocktail drinks like a Martini, the mezcal is the shining ingredient so the drink is strong and smokey,” says the drink’s creator Ellery Low from Maker in Brisbane.

“The inspiration comes from elote, which is grilled Mexican street corn. The Nixta corn liqueur provides a slight toasty caramel and popcorn element, while the Ancho Reyes Verde provides a slight vegetal and spice element which helps complement and cut through the Nixta. The olive oil garnish provides mouthfeel, which resembles the creamy mayo and cheese elements of an elote.”

Ingredients

  • 45ml mezcal
  • 20ml Nixta Corn Liqueur
  • 7.5ml Ancho Reyes Verde
  • 2ml agave syrup
  • 2 dashes salt and orange bitters

Instructions

  1. Pour all ingredients into a mixing glass, fill with ice and stir.
  2. Strain into a frozen coupe from a low distance.
  3. Garnish with 10-15 drops of olive oil.
