The drink from Sydney bar Re is on the 2023 Boothby Top 50 Drinks of the Year.
- 40ml Roasted Rice Distillate
- 40ml Clarified Banana Juice
- 15ml Whisky
- 65ml Tonka Bean Soda
From the drink’s creator, Matt Whiley:
“This drink uses the byproduct from rice grown only using rain water in the northern rivers, the byproduct is the cracked rice that is wasted during the polishing during sake production. The waste we produce from distilling the rice we then use in the garnish. The skins used from the banana juice is used in another drink on our menu - zero waste baby.”
