Whisky and sparkling wine. They might not be the first pairing that comes to mind, but if you like your whisky drinks long and refreshing, you might like to give this cocktail from Sydney's Burrow Bar a spin.

12 year old single malt from Aberfeldy is at the heart of the drink; the dram's fruity, honeyed character is amplified by a little local honey and a mix of mandarin and lemon juice. All that's left to do? Lengthen the drink a little by adding a splash of dry, blanc de blanc-style sparkling wine.

Golden Tower

Ingredients

  • 40ml Aberfeldy 12
  • 25ml mandarin & lemon juice
  • 15ml Urban Beehive Inner West honey syrup
  • 15ml blanc de blanc dry sparkling wine
  • 2 dashes Peychaud's Bitters
  • 10ml Pierre Ferrand Dry Curacao

Instructions

  1. Add all ingredients except the sparkling wine into a cocktail shaker with ice.
  2. Shake and strain into a highball glass.
  3. Fill glass with ice, top with sparkling wine.
  4. Garnish with a dehydrated orange.
