”Bright, aromatic, and effervescent, Campari & Passionfruit is a take on the classic Campari soda,” says its creator Oliver Gill, who worked up the recipe with fellow bartender Mikayla Adams.
“Campari is “washed” with passionfruit, and clarified with pectinex, yielding a tropical expression of its signature bitters and botanicals. Cold-brewed chamomile adds gentle floral notes that complement Campari’s herbal bitterness, while soft tannin supports the fruit and citrus for a crisp, refreshing finish. The whole batch is carbonated and the result is a sparkling aperitivo that’s vibrant, and unmistakably refreshing.”
Passionfruit & Campari recipe
Ingredients
- 450ml Passionfruit Campari
- 75ml Citrus Cordial
- 75ml Chamomile Simple
- 300ml Filtered Water
Method
- Add all ingredients to a Cambro and mix.
- Once filtered, transfer to carbonation bottles.
- Chill well & carbonate at 50psi.
For the Passionfruit Campari:
- 300g Passionfruit Puree
- 700ml Campari
- 1.5g Pectinex
Method
- Combine all ingredients in a Cambro & mix well.
- Leave for 1 hour then coffee filter, pouring back any cloudy liquid until it starts to run clear & slows to a drip.
For the Chamomile Simple:
- 10g Chamomile Tea (We use Somage)
- 500g Filtered Water
- 500g Caster Sugar
Method
- Combine tea and water and leave in fridge overnight.
- Strain through a fine mesh strainer then coffee filter.
- Cut 1:1 with caster sugar by weight.

Our citrus cordial is made with lemon, lime, grapefruit & bergamot. It is acidulated with a blend of verjus, citric & tartaric acids.
