This drink comes from talented bartender Judith Zhu, at the new Bistro Ebony in Sydney. Judith says:

“Ebony Signature Spritz is what happens when Mandelli starts talking about the European inspired food program and Judith listens. Right now that’s local strawberries and honey from producers we’re working with directly, which gives the drink this natural sweetness that sits somewhere between a spritz and something you’d actually want with delicious rich food made with love. Grey Goose keeps it clean, Rhubi and strawberry wine layer the fruit without turning it into cordial, finger lime soda adds texture and acid. It’s designed as an any-occasion drink, lunch, pre-dinner, between courses but the reality is it pulls double duty because it’s light enough to not wreck your palate but has complexity to match the menu. Seasonal, local, and proof that a spritz doesn’t have to be lazy.”
