Maybe Mae in Adelaide has long been one of Australia’s best bars, and this cocktail — which, they tell us, is a riff on a Shaky Petes — has become one of its standard bearers.

“It’s ultimately a good bloody party cocktail that doesn’t take itself too seriously,” says Maybe Mae manager, Nick Corletto, of the recipe developed by Ollie Margan. “It started as a staff party batch cocktail (we were all devilishly hungover on the day), and we added pilsner to the mix and it was locked into our menu from then on!”

Peel St Corpse Reviver

30mLs Never Never Triple Juniper
30mLs Lemon Juice
30mLs Ginger & Honey Syrup
Combine ingredients into a shaker, shake briskly, fine strain into a Butcher glass (200mL beer glass). Top up with the cleanest beer on tap, making sure it’s a decent looking head.

Ginger/Honey Syrup:
3kg of Ginger, cold pressed/juiced
2kg of Local Honey
2L of Simple Syrup
Combine ingredients.
