“Dr Shinichi Suzuki believes anyone can learn to create music, and his approach is similar to that of child learning a native language; a mix of observation, imitating and immersion,” says Alex Johnston, who along with Joshua McElhinney created this drink.
“We’ve all made far too many Pornstar Martini for anyone’s liking, got a good idea of why and what people drink them and laboured our way through tasting a bunch of them to create our version of one we would all like to smash a few.
“A house made dry banana champagne using all the fruits parts blends with a zero waste mix of passionfruit and tonka to create a vodka, liqueur and verjus infusion. Some length is added by the umami forward Noilly Prat and after a secondary ferment, is chilled and served just like a glass of bubbles, alongside a bump of passionfruit and tonka caviar made up of waste elements and agar agar.”

- 30ml Passionfruit Husk Haku Vodka
- 15ml Noilly Prat
- 100ml Banana Champagne
- 15ml Passion fruit + Tonka Liqueur
- 20ml Passionfruit verjus
Served like a glass of Champagne with a bump of passionfruit and tonka caviar.
