Up in smoke: The Dunes cocktail from Maybe Sammy

Drawing, as Maybe Sammy does, on the ritz and the lore of the Rat Pack era, it makes sense that their cocktail list features signatures named for Las Vegas casinos.

The Dunes, once owned by the mob, is today no more. It was blown up — in controlled demolitions — on live TV by its then owner Steve Wynn, in 1993 and 1994. The Bellagio today stands in its place.

And much like The Dunes Hotel went up in smoke, so too does the Dunes at Maybe Sammy; it’s just that it goes up in a bubble of rosemary smoke instead.

  1. Shake all ingredients with ice, strain into a chilled cocktail glass.
  2. At Maybe Sammy, the drink is garnished with a rosemary scented bubble created by a Flavour Blaster.

Dunes is a typical example of the way Maybe Sammy plays with their drinks — one of these cocktails go over the bar, and all of a sudden the whole room has got to have ’em.
