What makes a great bar? There's the hospitality, first and foremost — it helps, too, if the drinks are delicious. You want a well designed place, somewhere nice to spend some time in — you want atmosphere, experience, and a good time. You also want a sense of place.

That sense of place is what the Boothby Best Bars SA awards are about. We asked South Australian bartenders and bar owners to nominate the bars they think are best in their state. And then we polled the industry — elite bartenders, influential bar operators, and the smartest bar minds going around — to find out how the rankings should look.

Note, too, that our Top 30 is really a Top 31, because we have two bars in equal 30th.

Luca Baioni is the co-owner of Latteria on Hutt Street in Adelaide, and has had a career that spans from his hometown in Milan (which serves as the inspiration for Latteria), to award-winning bars in Rome, to Australia and to a role as a brand ambassador. But it is Luca's larger than life personality and his passion for hospitality that draws people toward him, and why he was voted by his peers as the 2026 Person of the Year presented by Jack Daniel's Bonded.
