The Morning Glory Fizz is an old drink, with some old fashioned flavours — but it’s a beautiful template for riffing upon.

Ingredients
- 50ml Canadian Club 1858
- 5ml absinthe
- 15ml lime juice
- 10ml lemon juice
- 15ml sugar syrup
- egg white or alternative
- soda water (to top)
Method
- Add the Canadian Club 1858 to the shaker.
- Add the sugar syrup.
- Add the citrus juices into the shaker.
- Add 20ml of egg white or an egg white alternative.
- Add 5ml of absinthe (the good stuff).
- Shake the ingredients well with ice.
- Strain into a chilled Fizz glass and top with soda, no ice.
