The Morning Glory Fizz is an old drink, with some old fashioned flavours — but it’s a beautiful template for riffing upon.

Ingredients

Method

  1. Add the Canadian Club 1858 to the shaker.
  2. Add the sugar syrup.
  3. Add the citrus juices into the shaker.
  4. Add 20ml of egg white or an egg white alternative.
  5. Add 5ml of absinthe (the good stuff).
  6. Shake the ingredients well with ice.
  7. Strain into a chilled Fizz glass and top with soda, no ice.

Adapted from a recipe first appearing in Harry Johnson’s Bartenders Manual, 1880s.
