This drink’s not for everyone, thanks to a large measure of aromatic bitters — something that Baker Jr. acknowledged, writing: “This mild fizz is again like initial olive sampling; either it suits or it doesn’t, and subsequent trials often show sudden shift [sic] to appreciation.”

Trinidad Fizz recipe
Ingredients:
30ml of Angostura aromatic bitters
30ml lime
20ml Aquafab
15-20ml grenadine
15ml cream
Method:
Pop a healthy pour of aromatic bitters into your shaker tin.
Next, put the grenadine in.
And the 15ml of cream.
Then add the citrus — 30ml of lime juice.
Then it's time for the Aquafab.
Shake all ingredients with ice.
Strain into a chilled Fizz glass and serve.
