“The catalyst drink for our ‘Beethoven’ menu, the idea is that Raspberry tastes like a raspberry but without actually containing any of the berry,” says Clayfield. “Looking at the oil composition that creates flavours we take those elements to use in the drink. Elements like cranberry, malic acid, rhubarb and rose. This was the first drink we had as a concept for the menu, when experiencing the music and weirdly tasting fresh raspberries, but not actually eating them. The challenge was to recreate that effect.”
