In his book, Charles H. Baker Jr writes that the Pouffle Fizz is “originally native to Paris,” before embarking on a rant about how there are but few Americans in Paris “who do things with their brains and hands.” He also describes this drink as a handy aperitif, writing: “This is a fine stomachic, and inspires interest in foods.”
The Pouffle Fizz
Ingredients:
45ml Amer Picon or orange bitter spirit
15ml grenadine
15ml Aquafab
soda to top
Method:
Measure 45ml of an orange bitter like Amer Picon, and add to a shaker.
Pop in 15ml of grenadine.
Add in the Aquafab to froth things up.
Shake hard with ice to make things very cold.
Strain into a chilled Fizz glass.
Top with soda and serve.
