“I wanted to create a delicious, well-balanced drink that everyone would enjoy,” says the drink’s creator, Above Board bartender Paige Chabert. “The drink is named Topolino, which means little mouse in Italian, as that was the nickname [co-owner] Hayden Lambert gave me when I first started at Above Board.”
Topolino recipe
- 30ml tequila =
- 10ml peach liqueur
- 25ml verjus
- 5ml apéritif blend
- 1 dash orange bitters
- 1 dash malic acid
Served in a coupe with a fancy orange twist.
