This drink is one of the Boothby Top 50 Drinks of the Year 2023 — you can see the full Top 50 here.

Described as the most technically complex menu that the team from Maybe Sammy has put together since the bar opened in 2018, the Mirage menu draws upon inspiring moments for its cocktails.

This drink the Apollo 11 from bar manager Hunter Gregory, pays tribute to the planning required in the high pressure environment of the bar — whilst it’s not exactly astrophysics, the result is certainly out of this world.

Ingredients

20ml rocket & dill Patrón Silver tequila
20ml beetroot & strawberry syrup
60ml pineapple & rhubarb tepache
40ml Minuty rosè
10ml supasawa
