At Bar Allora, they’re making an Australian classic, Italian-style.

“At this point, it seems every bar in Australia has its own version of the Sgroppino,” says the drink’s creator, Paolo Maffietti. “So, naturally, we decided not to join the party.”

“Instead of reinventing the Sgroppino for the hundredth time, we thought: why not take something Australian and make it Italian? After all, we’re an Italian bar in Australia.”

“Enter the Ragno — Italian for spider. Yes, the spider. That very Australian childhood classic made with lemonade and ice cream.”

“Think of it as your childhood spider after a summer in Italy, a few good life choices, and perhaps a slightly questionable relationship with Italian cocktails.”
