Here’s a drink built on an unusual pairing.
“Working from the pairing of Sichuan pepper and quince, we found there was a really nice unity of the piney electricity of the pepper and the warm, orchard quince,” says the drink’s creator — and the bartender behind the 2025 drink of the year — Kitty Gardner.
“The yoghurt adds texture to the drink as well as the honeycomb bridging the cereal, piney flavours with the warmer, autumnal ones.”
Darren Leaney and Rob Libecans also had a hand in the drink.
Super Zodiac
Ingredients:
- 35ml honeycomb yoghurt-washed mezcal
- 20ml quince liqueur
- 20ml quince syrup
- 2.5ml Sichuan tincture
- 15ml fresh lime juice
Method:
- Combine all ingredients in a shaker with ice and shake.
- Fine strain into a chilled glass.
