At Bar Demo in Newtown, they’re making Martinis we love.

“This is our number one seller, made my favourite way to drink Martinis — two to one, syrupy cold, with super fresh vermouth and good quality water,” says the drink’s creator, Oliver Churcher.

Demo Martini

Ingredients:

• Tanqueray Gin
• Tanqueray No. Ten
• Dolin Dry Vermouth
• house orange bitters
• Tasmanian spring water

Method:

1. Combine the gins, vermouth, bitters and water at a 2:1 ratio of gin to vermouth.
2. Chill until syrupy cold.
3. Pour into a chilled Martini glass.
