Here’s a non-alcoholic drink that outshone its boozy original.
“This drink came from my first cocktail at Society,” says the drink’s creator, Nathan Charles. “We were finding ways to use the ingredients for it in other expressions and this became the first mocktail I ever enjoyed more than the alcoholic serve.”
Guava Fizz
Ingredients:
- 30ml Seedlip Grove 42
- 60ml clarified guava & lemon myrtle cordial
- 90ml Fever-Tree Pink Grapefruit Soda

- 0.2g dried lemon myrtle
- 1.5g Pectinex Ultra SP-L
For the guava, lemon myrtle & white pepper cordial:
- 1000ml pectin-clarified guava purée
- 600g white sugar
- 200ml water
- 4g citric acid
- 2g malic acid
- 1g fine salt
Method:
- For the clarified purée, blend the Pectinex and lemon myrtle into the guava purée.
- Hold at 45°C for 14 minutes, then chill immediately.
- Strain through a fine or coffee filter until clear, and refrigerate.
- For the cordial, combine all ingredients and heat until the solids have dissolved, then bottle and refrigerate.
