One of our favourite tequila cocktails here at Boothby has long been the El Diablo. It’s a tiki-era tequila drink: essentially, a healthy dose of tequila, some ginger ale (or ginger beer, preferably), lime and creme de mure. It’s a delicious long drink.
And it’s that drink that has served as the inspiration for this picnic-worthy Tequila Ginger Highball.
It pairs the vanilla, orange and agave flavours of 1800 Reposado with the zesty, bubbly character of ginger and lemon kombucha — the kind you should be able to find in most supermarkets these days. Add a splash of lime juice and a little dab of sugar, and you’ve got the perfect cooler for a picnic in the park with mates.
Tequila Ginger Highball
- 50ml 1800 Reposado
- 90ml ginger & lemon kombucha
- 15ml lime juice
- 10ml sugar syrup
- berries to garnish
- Combine all ingredients and pour over ice.
- Garnish with berries.
